Our Jack Mackerel is caught in Sakaiminato, a natural harbor in Tottori Prefecture. We take the fish and put them through our proprietary production line based on thorough hygiene management practices, to clean and decontaminate the fish. Our delicate and speedy manufacturing processes preserve the Jack Mackerel's flavor and freshness so they are particularly suitable as sushi toppings and sashimi.
